Our Story

Nitinan (Sing) and Tannaree (Earn) Pukitpipat are very fond of their mother’s cooking rooted in the Southern part of Thailand. Along with Sing’s partner, Eric San Juan, they all share the same passion for food, culture, adventure, and family. Together these three Samila frontrunners have a combined experience of over 50 years in the food industry both in Chicago and Thailand.

Samila is a beautiful beach in Thailand with an iconic golden mermaid statue. Mermaid can mean a lot of things to many, but for Sing and his growing family, this symbolizes the synthesis of two worlds and the evolution of the humble beginnings of their mother’s restaurant in Bangkok. From their vivid memories of enjoying a scrumptious coconut noodle (Pad-Mhe-Tai) and savory Crab Curry (Kaeng-Poo), to the smell of freshly brewed Thai tea made by their grandmother during the weekends, and other delectable Thai street food of their native hometown. Sing and his family wish to bring this experience and share it with their new home city, Chicago by paying homage to their mother’s recipe book that she has kept with her throughout these years.

Samila Thai Fusion wants to introduce the authentic flavors of Southern Thai cuisine for everyone to enjoy. With its exotic flavors and vibrant menu, Samila Thai Fusion will take you on an exciting gastronomic culinary adventure with a refined taste unlike any other.
